Quote of the Month

Recipe of the Month: Cranberry Lemon Scones

1 kg                       Flour
220 g                     Sugar

4 tbsp                    Baking Powder

1 tbsp                    Salt

320 g                     Cold Buttter, Cubed

360 g                     Frozen Cranberries
2                            Lemons, Zested

280 g                     Buttermilk

8 pc                       Eggs, whole

Biscuit Method:

  1. Sift dry ingredients.
  2. Cut butter into flour.  Do not overwork.
  3. Whisk together buttermilk and eggs.
  4. Combine dry and wet, stir in berries.
  5. Roll until 1½’’ thick on floured surface.
  6. Cut dough into desired shape.
  7. Freeze Dough!
  8. Brush scones with egg wash and sugar.
  9. Bake @ 400F for 15 – 20 minutes on 2 baking sheets.
